I adapted from Dave Lieberman's recipe
5 tablespoons Olive Oil
8 garlic cloves (The original recipe calls for 12)
6(28 ounce) cans chopped tomatoes
2 1/2 tsps sugar (I thought this made such a difference in the taste)
1 tsp Italian Seasoning
- Heat the olive oil in a pan on medium heat
- Add the garlic and cook till it is fragrant. Do not brown it, it gives you a bitter taste
- Add the tomatoes and the Italian seasoning and simmer it for about 15 to 20 min
- Add the sugar and season with salt
- Serve over any cooked pasta
